
Vegan Ceviche

Ingredients
- 1 (14 ounce) can hearts of palm, cut in rings
- 3 medium tomatillos, diced (any color)
- 1⁄2 small red onion, diced
- 1/2 cup diced cucumbers
- 2 cups diced oyster mushrooms
- 1 large avocado, diced
- 4-6 radishes, sliced thinly
- 1/3 cup fresh cilantro, chopped
- 1 jalapeno, diced (optional)
- 2 limes, juiced (aprox 1/2 cup)
- 1 teaspoon olive oil
- salt & pepper to taste
Instructions
- Gently combine all the ingredients
- Season and refrigerate for at least 2 hours
- Serve and enjoy!
