Vegan Cold Vermicelli Cucumber Shrimp Salad

Ingredients

300 Grams (roughly) Vermicelli Noodles
12 Vegan prawns or 1 cup Vegan Shrimp (Optional)
1 Cucumber – cut in 4 lengthwise and sliced
2 Sliced Scallions or Green Onions
1/4 Cup Chopped Cilantro

Dressing
1 TBS Rice Vinegar
2 TBS Bragg or Vegan Fish Sauce
Juice of 2 Limes

Method

Soak Vermicelli in warm water until soft or boil quickly (about 2 minutes).
Drain and run under cool water. Combine with the rest of the ingredients.
Chill and garnish with Cilantro.
Enjoy!
