Vegan Cold Vermicelli Cucumber Shrimp Salad

Ingredients
- 300 Grams (roughly) Vermicelli Noodles
- 12 Vegan prawns or 1 cup Vegan Shrimp (Optional)
- 1 Cucumber - cut in 4 lengthwise and sliced
- 2 Sliced Scallions or Green Onions
- 1/4 Cup Chopped Cilantro
- Dressing
- 1 TBS Rice Vinegar
- 2 TBS Bragg or Vegan Fish Sauce
- Juice of 2 Limes
Instructions
- Soak Vermicelli in warm water until soft or boil quickly (about 2 minutes).
- Drain and run under cool water. Combine with the rest of the ingredients.
- Chill and garnish with Cilantro.
- Enjoy!
