Vegan Cold Vermicelli Cucumber Shrimp Salad

  1. 300 Grams (roughly) Vermicelli Noodles
  2. 12 Vegan prawns or 1 cup Vegan Shrimp (Optional)
  3. 1 Cucumber - cut in 4 lengthwise and sliced
  4. 2 Sliced Scallions or Green Onions
  5. 1/4 Cup Chopped Cilantro
  6. Dressing
  7. 1 TBS Rice Vinegar
  8. 2 TBS Bragg or Vegan Fish Sauce
  9. Juice of 2 Limes
  1. Soak Vermicelli in warm water until soft or boil quickly (about 2 minutes).
  2. Drain and run under cool water. Combine with the rest of the ingredients.
  3. Chill and garnish with Cilantro.
  4. Enjoy!
