  1. 1/4 cup vegetable oil
  2. 1/2 Tablespoon Earth Balance
  3. 1 cup flour
  4. 1 cup yellow cornmeal
  5. 1 tablespoon dry sweetener
  6. 1/2 teaspoon salt
  7. 2 teaspoons baking powder
  8. 1 cup soy milk
  9. 2 Servings Egg Replacer (equiv of 2 eggs)
  1. Preheat oven to 350° F
  2. Mix dry ingredients together well.
  3. In another bowl combine oil, soy milk and egg replacer.
  4. Blend the dry with the wet.
  5. Melt earth balance in a baking dish ( I use a round dish, 8" across for this bread )
  6. in the oven. Make sure bottom and sides are coated.
  7. Pour batter I the dish and bake for 20-30 minutes.
  8. Super tasty with Chili or Guacamole.
  9. Enjoy!
