1 bunch sea asparagus
1 Japanese, Lebanese or english cucumber, sliced
1 med-large avocado, chopped
4 tomatillos or 1 large heirloom tomato, diced
2 scallions, sliced
- Dressing
Juice of 1 lime
1 tsp rice vinegar
1 tsp soy sauce
1 tbsp. toasted sesame oil
Directions
- Combine dressing ingredients and set aside
- Combine salad ingredients in a large bowl, add dressing and toss gently until evenly coated. Garnish with fresh basil or cilantro leaves or sesame seeds.
