Gazpacho
Course: Soups, Vegan Soup
This chilled soup has been a life saver during this week’s record breaking heat wave.
It’s so tasty and fresh and easy to experiment with.
Ingredients
2 Large ripe tomatoes, diced
1/2 medium red onion, minced
1 medium cucumber, diced
2 Bell peppers ( I used a red and a yellow), diced
1 Stalk Celery, chopped finely
2 Cloves Garlic, crushed
1/2 Cup Fresh Herbs (I use a combination of Chives, Cilantro, Basil and Parsley), chopped finely
2 Tbsp pureed lemon or lemon juice
2 cups of tomato or Vegetable Juice (Tomato cocktail, V8 etc…)
- Optional ingredients as follows (I used them all)
1 Tbs Red Wine Vinegar
1/2 cup of cooked navy, black-eyed or lima beans
1 Tbs nutritional yeast
1 teaspoon ground turmeric
1/2 teaspoon paprika
1 teaspoon onion powser
1 teaspoon garlic powder
Ground black pepper to taste
Garnish of your choice ( avocado, cucumber Slices, Watercress, Avocado, Fresh Herbs etc… )
Directions
- Combine all of the ingredients, chill, garnish, serve and enjoy!
