This chilled soup has been a life saver during this week’s record breaking heat wave.
It’s so tasty and fresh and easy to experiment with.


  •  2 Large ripe tomatoes, diced

  • 1/2 medium red onion, minced

  • 1 medium cucumber, diced

  • 2 Bell peppers ( I used a red and a yellow), diced

  • 1 Stalk Celery, chopped finely

  • 2 Cloves Garlic, crushed

  • 1/2 Cup Fresh Herbs (I use a combination of Chives, Cilantro, Basil and Parsley), chopped finely

  • 2 Tbsp pureed lemon or lemon juice

  • 2 cups of tomato or Vegetable Juice (Tomato cocktail, V8 etc…)

  • Optional ingredients as follows (I used them all)
  • 1 Tbs Red Wine Vinegar

  • 1/2 cup of cooked navy, black-eyed or lima beans

  • 1 Tbs nutritional yeast

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon paprika

  • 1 teaspoon onion powser

  • 1 teaspoon garlic powder

  • Ground black pepper to taste

  • Garnish of your choice ( avocado, cucumber Slices, Watercress, Avocado, Fresh Herbs etc… )


  • Combine all of the ingredients, chill, garnish, serve and enjoy!
