Coconut Apple Crumble

That might sound like a strange combination but trust me, the shredded coconut gives the crumble the most awesome toasty crunch.

This is a variation of the recipe my mother has been making since I was a kid. It’s so quick, easy, and addictive. I made a huge one yesterday afternoon, for me and the kids, and it’s already gone.

Ingredients:

1 Cup Flour
1 Cup Oats
1 Cup Brown Sugar
1 Cup Shredded Coconut
1 Cup Vegan Butter ( I used coconut Earth Balance for this one)

6-10 (or as many as it takes to fill your baking pan) apples. Peeled, cored, and quartered.

Method:

Preheat oven to 350°F

Peel Core and Slice Apples and lay in a lightly buttered baking dish.

In a mixing bowl, combine dry ingredients. Cut in butter with a pastry cutter (two butter knives work just as well) until the mix is the consistency of a soft granola.

Cover apples completely with oat mixture and bake for 20 to 40 minutes. Baking time varies dramatically, depending on the variety of apple you use and thickness of the slices, so check in on it from time to time.

Remove from oven when the apples are tender but not mushy and the crumble is golden brown, and let sit at least 5 minutes.

Serve warm with a scoop of Vegan Vanilla Coconut Ice Cream and Enjoy!
