Vegan Ceviche

I could eat this by the ton. So fresh and delicious! The combination of palm heart and oyster mushroom gives it that “meaty” texture that you get in a seafood Ceviche, without the bad karma, mercury, lead, and PCBs. 🙂

  1. 1 (14 ounce) can hearts of palm, cut in rings
  2. 3 medium tomatillos, diced (any color)
  3. 1⁄2 small red onion, diced
  4. 1/2 cup diced cucumbers
  5. 2 cups diced oyster mushrooms
  6. 1 large avocado, diced
  7. 4-6 radishes, sliced thinly
  8. 1/3 cup fresh cilantro, chopped
  9. 1 jalapeno, diced (optional)
  10. 2 limes, juiced (aprox 1/2 cup)
  11. 1 teaspoon olive oil
  12. salt & pepper to taste
  1. Gently combine all the ingredients
  2. Season and refrigerate for at least 2 hours
  3. Serve and enjoy!
