Ingredients

  • 1 bunch sea asparagus

  • 1 Japanese, Lebanese or english cucumber, sliced

  • 1 med-large avocado, chopped

  • 4 tomatillos or 1 large heirloom tomato, diced

  • 2 scallions, sliced

  • Dressing
  • Juice of 1 lime

  • 1 tsp rice vinegar

  • 1 tsp soy sauce

  • 1 tbsp. toasted sesame oil

Directions

  • Combine dressing ingredients and set aside
  • Combine salad ingredients in a large bowl, add dressing and toss gently until evenly coated. Garnish with fresh basil or cilantro leaves or sesame seeds.
