This chilled soup rescued us during this week’s record breaking heat wave.
It’s so tasty and fresh and easy to experiment with.
4 Ripe tomatoes
1/2 medium onion
1 standard cucumber
2 Peppers ( I used a red and a green)
1 Stalk Celery
2 Cloves Garlic
1/2 Cup Fresh Herbs (I use a combination of Chives, Cilantro, Basil and Parsley)
2 TBS Red Wine Vinegar
Juice of 1 Lemon
Up to a cup of Tomato or Vegetable Juice (Tomato cocktail, V8 etc…)
Spike or Salt and Pepper to taste
*Garnish of your choice ( Cucumber Slices, Watercress, Avocado, Fresh Herbs etc… )
Half and seed tomatoes.
Chop all solid ingredients coarsely and puree with in food processor or blender until desired consistency is attained.
Add liquids for last few seconds.
Chill, garnish, serve and enjoy!
