Forbidden Rice Salad

I called this forbidden rice salad because the rice I used is called forbidden rice.

Ingredients

  • 3 to 4 cups cooked wild, purple, red or black rice, cooled

  • 2 scallions, chopped

  • 1/2 cup celery, chopped

  • 1/2 cup carrot, grated

  • 1 /2 cup firm tofu, cubed

  • Sesame seeds ( garnish )

  • Vinaigrette
  • 1 Tbsp sesame oil

  • 1 tablespoons rice e vinegar, or more to taste

  • Salt and freshly ground black pepper

  • 1 large clove garlic, crushed or minced or 1/2 tsp garlic powder

  • 1 Tsp Soy Sauce

Directions

  • whisk vinaigrette ingredients together and set aside
  • Combine all ingredients together, then toss in the vinaigrette until coated.
