Forbidden Rice SaladCourse: Miscellaneous
I called this forbidden rice salad because the rice I used is called forbidden rice.
3 to 4 cups cooked wild, purple, red or black rice, cooled
2 scallions, chopped
1/2 cup celery, chopped
1/2 cup carrot, grated
1 /2 cup firm tofu, cubed
Sesame seeds ( garnish )
1 Tbsp sesame oil
1 tablespoons rice e vinegar, or more to taste
Salt and freshly ground black pepper
1 large clove garlic, crushed or minced or 1/2 tsp garlic powder
1 Tsp Soy Sauce
- whisk vinaigrette ingredients together and set aside
- Combine all ingredients together, then toss in the vinaigrette until coated.
