I love vegan sausages but the store bought ones are really expensive and packed with sodium.
I tried this recipe with no expectations at all and was so very pleasantly surprised by how great they are! The texture and the flavour are spot-on!
I spiralled some zucchini and cut back on the pasta noodles a little, to make a lighter dish. The cashews make it creamy and delicious and the greens give it some crunch and some life. Love love love it!
