Cactus Tacos

This is the first time I ever used cactus in a recipe, and I LOVE it! I hope you will too.

Cactus Tacos

This is the first time I've tried making anything with Cactus, and I LOVE it! I hope you will too.

  1. 1 Tablespoon Olive Oil
  2. 1 Small onion - thinly sliced
  3. 1 Clove Garlic - minced
  4. 4 medium-small pickled Cactus paddles - sliced
  5. 6-8 white mushrooms - sliced
  6. 1/2 cup purple cabbage - very thinly sliced
  7. 1/2 cup ice burg lettuce - thinly sliced
  8. 6 corn tortillas
  1. Saute onions in the oil until they start to become tender and translucent
  2. Add Mushrooms and cactus
  3. Saute until mushrooms are tender
  4. season to taste
  5. serve on warmed tortillas topped with shredded cabbage and lettuce
  6. serve with salsa and/or guacamole of your choice
