These are so so so yummy, for desert or on the side of a lumberjack breakfast. Delicious!!
4 Apples ( I like granny smith because they are firm and tart. For a sweeter apple go with a Gala or Golden Delicious)
1 Teaspoon Cinnamon
1/4 Cup Brown Sugar
1/2 Cup rolled Oats
2 Teaspoons unbleached Flour
1 Tablespoon Earth Balance, vegan butter or margarine
* I’m not a fan of raisins but if you are 1/4 cup tossed into the mix would probably make a tasty addition.
Preheat oven to 350 F
Remove the cores of the apples. I think there are little gadgets that do this for you if you find it tricky. I use a potato peeler.
Mix remaining ingredients and stuff mixture into the center of the apples, sprinkling leftovers on top.
Bake in the oven 15-25 minutes depending on the size and type of apple you use. You want them soft but not mushy.
